I have not had a kitchen in over a week now. In that week, I have had pulled pork (in the crock pot) lemon chicken (on the Foreman grill), spaghetti with ground hamburger (completely out of the microwave), egg, bacon, and cheese English muffins (toaster oven and microwave) lunches, and baked salmon (in the toaster oven)
So if you ever need to know how to cook ANYTHING in any appliance other than an oven and stove top, let me know, I can probably figure it out!
Pulled pork: Easiest meal I have made. I just tossed a pork loin in the crock pot and covered it with 3/4 a bottle of barbecue and turned it on high for a few hours. IT was probably the best meal.
lemon chicken: this was a favorite of mine when I was on the low iodine diet (yuck) after my thyroidectomy. I just sprinkle lemon pepper and garlic salt and put it on the Foreman grill.
spaghetti: (this I am most proud of) I used my bacon microwave cooker and put the hamburger spread out over it. I pretty much just microwaved it for 5 or 6 minutes. After that was done, I put spaghetti in water and it microwaved around 10-12 minutes. Then I dumped the hamburger and sauce in bowl and microwaved it for 3 minutes. While that was cooking I made rolls in the toaster oven. We didn't eat this meal because Randy's dad offered to watch the girls so we could go to dinner (Don Pablo's and it was super yummy!) But the girls seem to enjoy it.
The salmon was from Schwans. It is the best we have found since leaving Alaska. I just put it in the toaster oven frozen and let it cook for 25 minutes. I heated up butter and used a brown sugar mix (from the Alaskan Salmon Bake) to pour over the top.
Lunches for the most part were just reheated dinners and sandwiches.
And today I made eggs in a microwave cooker, bacon on the microwave cooker, and English muffins in the toaster oven. As good if not better than Mickey D's itself!
I am still behind in most everything, but got a few errands run. Also, Randy is in a buying mood. WE LOVE THOSE MOODS IN OUR HOUSE!! I dropped the Foreman grill and broke it when I was cleaning it. He bought me a new one AND a griddle. I have never had one (couldn't really justify it). Now I am able to cook LOTS of food at one time. Thanks Randy! Maybe tomorrow I will get some pictures out here!

I NEVER remember to make pulled pork. That is so easy. Why don't I do it more often?
You are a brave woman, dealing with all this and still cooking. I'm sure I'd just become (more of) a regular at the fast food drive thrus! It still begs the question: What do people without basements w/ sinks, microwaves, etc do during kitchen remodels? I can't imagine!
I'm impressed that you even bother to cook such things! I would soak up all that I could and take a break from cooking. Go you!
You cooked spaghetti noodles in the microwave?? I never thought you could do that!... If I'd only known that in college when I lived in the dorm! My granddad used to make scrambled eggs in the microwave. We basically just use it to heat up stuff, not cook. Now you've got me thinking!
Your tips are so good and I AM impressed! Way to go Lady!
Assuming we begin Project: Kitchen/ Bathroom Remodel at our house in the winter, I will be at a huge disadvantage (like Katie mentioned) as our basement is the epitome of "unfinished" and the next closest sink is upstairs! Can you just see me washing my crockpot in the bathtub? LOL!
It sounds like I'll need a toaster oven to be able to cook up some of your specialties when it comes my turn! I'm really enjoying following your progress as you plug away through this huge undertaking!
Wow. I am seriously impressed with the cooking. I don't cook those things with a FULLY FUNCTIONING KITCHEN at hand. GO YOU!
I do not miss creative cooking without a kitchen! Sounds like you are doing very well though :0)
